Meal Planning Monday #127

Hey there Monday after Spring Break.  I’m not exactly excited to see you.
We had such a fun week off last week that it’s going to take me a few days to get back into the swing of things.  You know what’s not going to be difficult this week though?  My meal planning.  I wrote out my grocery list and shopped over the weekend…and dinner this week will be yummy, family friendly and EASY.  Enjoy!
I was in a taco mood this morning (don’t ask me why) and remembered that I had a simple recipe for Tex-Mex Pitas to share with you.  It’s like a taco but in a pita.  Yum!
Looking for a hearty vegetarian meal?  My Pasta Fagioli fits the bill!  Your family will never miss the meat!
Jolly Green Joes for St. Patrick’s Day!  Ground turkey and loads of green veggies make this spin on Sloppy Joes perfect for the 17th!
My Green Chile Potato Soup comes together in the slow cooker, so it’s super family friendly!  I love the addition of potatoes.  Potatoes in my soup make me happy!
Have you guys made my Sloppy Joe Quesadillas yet?  I’m not exaggerating when I say they’re life changing.  (Okay, maybe I’m exaggerating just a tad…)  Friends…MAKE THESE.  I’m telling you, your family will LOVE this simple little supper!
