For dinner tonight, how about you make a quick little ground turkey with green chiles, spinach and goat cheese? And then you add it on top of quinoa. Yummy, hearty, and delish! Of course, if your family isn’t into quinoa, just substitute with rice (or even pasta!). A quick and flavorful weeknight meal.
This recipe serves about four.
Shopping List
1 pound of ground turkey breast
1 onion, chopped
2-3 cloves of garlic, chopped
2 (4 oz) cans of chopped green chiles
1 (10 oz) box of frozen spinach, thawed and all excess water squeezed out
Crumbled goat cheese to garnish
Extra Virgin Olive Oil (EVOO)
Salt and Pepper
1 cup of quinoa, rinsed under cold water and then drained
1 1/2 cups chicken stock or water
In a large skillet over medium-high heat, brown your ground turkey in a drizzle of EVOO. Once browned and crumbly, add in your onion, garlic and a big pinch of salt and pepper. Saute the onion and garlic about five minutes before adding in your chopped green chiles and spinach. Reduce heat to medium-low and simmer about 5 to 10 minutes.
Meanwhile, add your rinsed quinoa and chicken stock to a small pot over medium-high heat and bring to a boil. Once it begins to boil, cover and reduce heat to low and simmer another 15 minutes. Do not remove the lid while it’s simmering. After 15 minutes, remove the lid and fluff with a fork. Drizzle in just a tiny bit of EVOO or a tablespoon of butter and a nice pinch of salt and pepper.
Serve turkey mixture over quinoa. Garnish everything with some crumbled goat cheese.
