Hello Monday.
I have summer fever.
And it’s only April 25.
I don’t know what’s going on…but I’m over spring, I’m over the school routine…I’m ready for lazy mornings, days by the pool and dinners on the patio. And again, it’s only April 25. We’re so close and yet…so far away. Here’s hoping my fever reduces this Monday ;).
Crispy Chicken with Poblano Sauce. Such a bright and cheery supper for a Monday night (and easy too!). If you don’t think your kids will enjoy the poblano sauce, just give them ketchup :).
Andrew’s favorite supper is meatloaf…so during burger season, we enjoy it as a Meatloaf Burger!
Y’all…you need to make my Hawaiian Chicken & Rice in the Slow Cooker! Not only is it insanely delicious but it’s incredibly simple (hello, slow cooker!). Your family will love this supper!
I think we should indulge a little on Thursday night…along with Scandal, I’m thinking Mexi Mac and Cheese.
Round out your week with my Chicken Enchilada Quinoa Soup. It’s really more like a thick chili than a soup. It’s thick, it’s hearty, it’s full of flavor…and it’s all prepared in the slow cooker. Amen.
