Over the weekend, we made Lemon Poppy Seed Pancakes…because we love pancakes, we love lemon and we love little bits of poppy seeds running through just about anything. Simple and delightful! Enjoy!
This recipe makes about 10 pancakes.
Shopping List
2½ cups all purpose flour
½ cup brown sugar
4 teaspoons baking powder
1½ cups milk
3 tablespoons lemon zest
3 tablespoons lemon juice
2 eggs
1 tablespoon poppy seeds
Maple syrup or powdered sugar for garnishing
Preheat pancake griddle to 350 degrees or stove top griddle over medium-high heat. Lightly spray with Pam.
In a mixing bowl, combine flour, sugar and baking powder with a whisk. In a separate bowl, whisk together milk, lemon zest, lemon juice and eggs. Whisk milk mixture into flour mixture slowly until incorporated (do not over mix). Stir in poppy seeds.
Spoon pancake batter on to griddle flipping only when bubbles appear on the tops of the pancakes (about 3 minutes per side).
When your pancakes are done, sprinkle on a little powdered sugar or drizzle on some syrup.
These are perfect for a summer morning!
