Hey there cute little avocado halves. I adore you.
The other day, I had leftover shrimp, so Ashby and I whipped this up for lunch. It’s nothing more than a simple little idea for your next lunch (or light supper!). Easy, colorful and good for you. Enjoy!
This makes one stuffed avocado (two halves).
Shopping List
1 avocado
a little chopped red onion (however much you like)
a little shredded cheese (I used Queso Fresco)
leftover cooked shrimp (or see below for a quick idea)
1 lemon
salt and pepper
Take each avocado and split it in half. Remove the seed and then lightly scoop out most of the inside into a bowl. Take your bowl of avocado and mash it up with a fork. Next, stir in some chopped red onion, your shrimp, a little cheese and a pinch of both salt and pepper. Fill your avocado halves with your mixture. Lightly juice your lemon down over the top. Serve.
Hello? So simple it’s stupid, right? This was the easiest little lunch to make! Okay, if you don’t have leftover shrimp then just take some peeled and deveined shrimp that’s been cooked and thawed and toss it in a little Old Bay seasoning. Easy.
Don’t have another boring salad for lunch today :).
