It’s red, it’s white, it’s blueberry, it’s coconut…it’s the perfect little something for your July 4th celebrations!
I’ve said it a hundred times but I’ll say it again, trifles, parfaits and such are great for entertaining because they’re prepared in advance and kept in the fridge until it’s time to enjoy. A girl’s best friend when she’s hosting is a dessert that needs no work. Assemble and go.
Make just a few for your family or a whole bunch for a party…either way, huge hit!
This recipe makes enough for about 6 to 8 parfaits (depending on your serving size).
Shopping List
1 (3.4 oz) box of instant coconut pudding (use vanilla if you can’t find coconut)
2 cups of milk (I used 2%)
about one cup of Cool Whip, thawed just a bit
half a (14 oz) can of sweetened condensed milk
about 3 cups or so of sliced strawberries
about 3 cups or so of fresh blueberries
about 4 cups of sweetened flaked coconut
1 (7 oz) package of short bread cookies (you won’t use all of them), crushed just a little
In a large mixing bowl, whisk together your pudding and milk for about two minutes. After two minutes it should be thickened up a bit and then whisk in your Cool Whip and half of a can of sweetened condensed milk.
Slowly spoon a little of the pudding mixture across the bottoms of your serving dishes. Next, add in a few sliced strawberries, blueberries a little coconut and a sprinkle of shortbread cookie crumbs. Repeat. Top each parfait with coconut and a few more cookie crumbs.
Refrigerate until you’re ready to serve. These stay fresh in the fridge up to 48 hours.
That’s it! A little coconut pudding, a little fruit, some shredded coconut and cookie crumbs and you have yourself a dessert for any red, white and blue occasion!
