Simple Summer Pies

The older I get…the more of a pie person I become.  I used to think pies belonged at Thanksgiving and nowhere else, but oh I was wrong!  Pies are the perfect summer dessert because you can make them in advance.  No fussing with something sweet after dinner, just pull out your pie and you’re done.

Today, I’m sharing some of my very favorite simple summer pie recipes.  Some need to be baked, some are frozen (icebox pies!), and some come out of the fridge.  Bottom line…they’re all insanely delish (and simple!).
