Confession time: I used to think that the slow cooker was reserved for fall and winter only.
I WAS WRONG.
The longer I was a mom, the more I cooked and the busier our schedules became, I quickly realized that the slow cooker is a lifesaver 365 days a year. During the hot summer months, when I don’t want to stand over my stove and oven, the slow cooker saves the day. When we’re out by the pool all day and just want to come inside to dinner already prepared, the slow cooker saves the day. When it’s a million degrees out but I don’t want to heat up the kitchen, the slow cooker saves the day. The slow cooker was made for every day friends. Every. Day.
Here are just a few of my favorite slow cooker recipes for summer. Throw your ingredients in, head out, come home, eat supper. That’s it!
