I’ve been using my apple cookie cutter lately making sandwiches for my kids’ lunchboxes…and decided to get all crazy and make some little apple pies too. If you don’t have an apple shaped cookie cutter, use whatever you like or just cut your crust into squares and go. This is seriously the world’s easiest little treat.
This recipe makes about 8 little pies.
Shopping List
about 2 cups of chopped apples, I used 2 Gala apples
1/2 cup flour
1/4 cup brown sugar
2 teaspoons cinnamon (plus another little bit to garnish)
1 box of refrigerated pie crust (or use homemade, whatever you have!), at room temp
Preheat your oven to 400 degrees.
Line your baking sheets with parchment paper or spray liberally to avoid sticking. Set aside.
In a mixing bowl, toss your apple pieces together with your flour, brown sugar and cinnamon. Set aside.
Take each crust and lay it out on your counter. Using your cookie cutter, cut your dough into shapes (or use a knife and make squares). Take a piece of dough and place it on your prepared cookie sheet and then place about a tablespoon of apple mixture in the center. Take another piece of dough and place it on top. Lightly pinch down the sides so that it bakes up together. If you can’t get your dough to stick together, just place a little water on your finger and run it around the edge of your crust, that should bind the two pieces together. Repeat with remaining dough.
Pop your baking sheets in the oven and bake about 9 to 10 minutes. Remove from oven and shake just a little cinnamon down over the tops of the warm pies. Serve.
That’s it! Simple, festive, and perfect for our transition into September.
