Well, since school begins for us on Monday, I officially declare it one of my favorite seasons…
When I think of back to school and September, I think of apples. Today is my first of several apple recipes to kick off this transition of August into September. To see all of my apple recipes (I have both sweet and savory!), click HERE.
Right here is a good little recipe you can make over and over again. My kids love these Apple Oatmeal Cookies and I bet yours will too!
This recipe makes about 1½ dozen cookies.
Shopping List
1½ cups all-purpose flour
1 teaspoon baking soda
1 tablespoon cinnamon
1 cup of butter, softened
1 cup of brown sugar
2 eggs
1 teaspoon vanilla
1 cup of grated apple (just use your cheese grater!)
3 cups of oats (quick cooking is fine or traditional)
Preheat oven to 350 degrees.
Grease two cookie sheets and set aside.
In a mixing bowl, whisk together the flour, baking soda and cinnamon. Set aside. In a second mixing bowl, cream together your butter and brown sugar with an electric mixer. Beat in the eggs and then finally, stir in the vanilla. Next, slowly add your dry ingredients into your wet ingredients and stir together with a spoon. Then stir in your grated apple and oats.
Drop by the tablespoonful onto your prepared baking sheets.
Bake about 9 to 10 minutes or until the edges are just lightly browned.
Remove from oven and enjoy immediately or keep stored in an airtight container.
