BBQ Ranch Chicken Sandwiches {in the slow cooker}

BBQ Ranch Chicken Sandwiches

I’m always thinking of ways to create hearty suppers in the slow cooker that don’t taste like “slow cooker meals”.  My BBQ Ranch Chicken Sandwiches are just that!  You pile your ingredients in the slow cooker first thing in the morning, let it cook all day, come home, crisp up some bacon bits for garnish, assemble and enjoy.  That’s it!  This is a family meal that you can eat year around.  Enjoy!

This recipe serves four.

Shopping List
1 pound of boneless, skinless chicken breasts
1 bottle of your favorite BBQ sauce (enough sauce to completely cover the chicken in the slow cooker…about 3 cups or so)
1 (1 oz) packet of dry Ranch dressing mix (the powdery kind in the packet)
Ranch salad dressing to garnish (the liquid kind in the bottle)
Chopped green onions to garnish
chopped, crispy bacon pieces to garnish (I crisped up four slices of bacon)
4 burger buns

In your slow cooker, place your chicken, BBQ sauce and packet of dry Ranch dressing mix.  Cover and cook on low 6 to 8 hours or on high 3 to 4 hours.

When you’re ready to serve, remove lid and shred up your chicken right inside of your slow cooker using two forks.  Assemble your sandwiches: bun, shredded BBQ chicken, a little bit of Ranch dressing, chopped green onions and a sprinkle of crispy bacon bits.

That’s it!  Busy nights don’t stand a chance against this dinner.  It’s on the table in no time!

Well, I’ll be making these next week for sure! You know it’s hard to please both boys I live with, but these will do it!

Yum! I’m going to make these next week too! What a crowd pleaser! Perfect!

So for work I am gone more like ten hours for the day…do you think this would get too dry if I left it in on low for ten hours?

    • Mix and Match Mama August 3, 2016 at 8:04 am

Not one bit! Just make sure you have enough BBQ sauce in there to cover the chicken.

        Thank you so much!

Is it okay to use frozen chicken or should I thaw first? Thanks!

    • Christine August 8, 2016 at 8:26 am

I normally use frozen meat in my slow cooker and have never had a problem.

I absolutely love your recipes and your cookbooks are my favorite!! I do have a question though, when you make meals like this, pasta, panini sandwiches or (our favorite) bbq chicken burritos, how do you and Andrew eat them? I know y’all eat an extra healthy diet and so was curious if you made revisions? Thanks for making meal time simple for this new mama!

I have made your BBQ chicken with apple juice many times and we love it. How does this compare? Just a different flavor and more creamy?

  • Emily August 3, 2016 at 7:16 pm

    What’s your fave bbq sauce?

    • Christine August 8, 2016 at 8:27 am

Yes id love to know this to 🙂

Made this last night for my family! Huge hit! My chicken was frozen and put it straight into slower cooker frozen and followed the remaining instructions and it turned out great! Thanks for a yummy and easy dinner! It is going into the rotation!

I made these for dinner this week and they were a Hit! I used boneless skinless thighs and grabbed some slider buns because my people love “little” food.
    Thanks for a recipe that’s a keeper!

This looks so good, making it tonight

I want to try this but my kids are super sensitive to anything that has a little spice to it. I know BBQ hasn’t really been a hit around here but wondered if using the ranch took some of the heat from the BBQ? Thanks!
