I’m always thinking of ways to create hearty suppers in the slow cooker that don’t taste like “slow cooker meals”. My BBQ Ranch Chicken Sandwiches are just that! You pile your ingredients in the slow cooker first thing in the morning, let it cook all day, come home, crisp up some bacon bits for garnish, assemble and enjoy. That’s it! This is a family meal that you can eat year around. Enjoy!
This recipe serves four.
Shopping List
1 pound of boneless, skinless chicken breasts
1 bottle of your favorite BBQ sauce (enough sauce to completely cover the chicken in the slow cooker…about 3 cups or so)
1 (1 oz) packet of dry Ranch dressing mix (the powdery kind in the packet)
Ranch salad dressing to garnish (the liquid kind in the bottle)
Chopped green onions to garnish
chopped, crispy bacon pieces to garnish (I crisped up four slices of bacon)
4 burger buns
In your slow cooker, place your chicken, BBQ sauce and packet of dry Ranch dressing mix. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours.
When you’re ready to serve, remove lid and shred up your chicken right inside of your slow cooker using two forks. Assemble your sandwiches: bun, shredded BBQ chicken, a little bit of Ranch dressing, chopped green onions and a sprinkle of crispy bacon bits.
That’s it! Busy nights don’t stand a chance against this dinner. It’s on the table in no time!
