Earlier this fall, I made little Apple Hand Pies, so in honor of Turkey Day coming up, I thought I’d make a pumpkin version too. These little pies are just so easy and even more delicious!
This recipe makes about 8 little pies but you can easily make more because you will have some leftover filling.
Shopping List
1 (15 oz) can of pumpkin puree (like Libby’s)
1/2 cup powdered sugar
1 tablespoon pumpkin pie spice (plus another little bit to garnish)
1 box of refrigerated pie crust (or use homemade, whatever you have!), at room temp
Preheat your oven to 400 degrees.
Line your baking sheets with parchment paper or spray liberally to avoid sticking. Set aside.
In a mixing bowl, stir together your pumpkin, powdered sugar and pumpkin pie spice. Set aside.
Take each crust and lay it out on your counter. Using your cookie cutter, cut your dough into shapes (or use a knife and make squares). Take a piece of dough and place it on your prepared cookie sheet and then place about a tablespoon of pumpkin mixture in the center. Take another piece of dough and place it on top. Lightly pinch down the sides so that it bakes up together. If you can’t get your dough to stick together, just place a little water on your finger and run it around the edge of your crust, that should bind the two pieces together. Repeat with remaining dough.
Pop your baking sheets in the oven and bake about 9 to 10 minutes. Remove from oven and shake just a little pumpkin pie spice down over the tops of the warm pies. Serve.

Oh goodness! How sweet are you?! My cutters are about five inches wide. I think that’s a pretty good size :).
