That sausage cornbread casserole is to DIE for and it was so easy to make gluten friendly!! My husband (who’s name is Shay!!) raved about it when I made it for his birthday and how yummy it was. The gingerbread muffins look so delicious and would be perfect to munch on as we travel Christmas Day! Merry Christmas to you and your family!!

I am bookmarking these for the future. I am almost 42 weeks pregnant with #3 and eviction is set for Thursday (if I don’t go into labor before) so I think our Christmas menu is going to be cold cereal haha but these all look great for Christmas or a brunch. I was also already thinking of fun birthday party ideas when your bday is late December and thought ‘cookies and cocoa’ would be fun so that slow cooker cocoa is perfect.

Hi shay! I tried the gingerbread muffins, the taste is really great! But, I think there might be an error on the recipe post, I followed the recipe exactly but my muffins oozed out of the tins and even some spilled onto the bottom of the oven. I saw on your recipe page a couple of others mentioned the same thing happening to them. Maybe too much baking soda? Should it be only 1/4,or 1/2 teaspoon? I’d love to give them a go again!

Shay – I’ve been a loyal reader for years, but never commented before. I just wanted to let you know that my husband and I hosted our first Christmas with my family (we just got married in October, too!) and made your cornbread casserole for Christmas morning breakfast.
