Well…these little bites are just perfection.
I made a batch and took them to Sunday school and my friends and I enjoyed them with coffee before class started. But you know what? They would make excellent appetizers too. And bonus, you can even make them in advance and just pop them in the oven right before you’re ready to enjoy them. Go ahead and make a double batch…you’ll be glad you did!
This recipe makes about 3 dozen bites.
Shopping List
1 pound of breakfast sausage
Extra Virgin Olive Oil (EVOO)
1 (8 oz) package of cream cheese, softened
1 (4 oz) can of chopped green chiles
1 tablespoon chili powder
2 cups of shredded cheddar cheese
3 (12-count each) boxes of mini fillo shells (found in the freezer department)
Preheat oven to 350 degrees.
In a large skillet over medium-high, brown up your sausage in a drizzle of EVOO until it’s browned and crumbly.
Next, in a mixing bowl, combine using a wooden spoon your cooked and crumbly sausage, cream cheese, chopped green chiles, chili powder and cheddar. Mix until everything is incorporated. Then take each one of your mini fillo shells and add about a tablespoon of filling to each one. Place each shell on a baking sheet. Once all of your shells are filled, pop your baking sheet in the oven and bake about 10 minutes.
Remove from oven and serve immediately.
They’re just little bites of wonderful.
