Looking for a quick summer side? Well, you need to try my Savory Watermelon Salad then! Chunks of watermelon with red onion, cucumber, basil and Feta topped off with a yummy dressing and you’re done. The perfect patio accompaniment!

Make as much or as little as you like! You can just serve one or you can serve a big group if you’re entertaining. Just change the amount of ingredients you add.
Shopping List
Large cubes of fresh watermelon
chopped red onion (I used one onion to serve six)
a handful of basil, chopped
1 English cucumber (you don’t have to peel English cucumbers!), chopped
crumbled Feta cheese
a good pinch of both salt and pepper
red wine vinegar
Extra Virgin Olive Oil (EVOO)
In a bowl, toss together your watermelon, red onion, basil, cucumber and Feta with a nice pinch of both salt and pepper. In a smaller bowl, whisk together your dressing. Use 1 part red wine vinegar to 3 parts EVOO (depending on how much dressing you like for the size salad you’re making). Whisk in a pinch of salt and pepper too. Toss your salad with the dressing and serve immediately.
See? Easy! If you like a lot of Feta, add more Feta. If you like a lot of basil, add more basil. Just add as much or as little as you need. This salad tastes like summer.

They all eat the watermelon, some eat every bite, some just eat the watermelon and cheese…they’re all served it and it’s eaten, but not all of them eat the raw onions (but some do!).
