Confession: I don’t like grilled chicken.
Does that make me weird?
I’m sure you’ve noticed by now, but I rarely make a meat with two sides kind of meal. I like casseroles, pastas, tacos, burgers, soups, slow cooker food and such. I like my food to be all intermixed with lots of flavors and textures. A meat and two sides meal is just not my thing. That being said, all four of my kids and my hubby love grilled chicken…sigh…so, if that’s on the menu, I HAVE to jazz it up. On this night, I made a really quick, simple and flavorful blackberry salsa to go up on top of my grilled chicken and it made the meal for me! It was so good that we were dipping chips in it too 🙂 . Whether you’re serving chicken, fish, pork or whatever…you can top it with this salsa. Easy and delicious!
This recipe serves about 4 to 6.
Shopping List
4 chicken breasts
Extra Virgin Olive Oil
Salt and Pepper
lemon pepper seasoning
1 red onion, chopped
2 pints of blackberries
1 jalapeno, chopped (remove the seeds and ribs for less heat)
1 large tomato, chopped
a handful of cilantro, chopped
Preheat your outdoor grill or indoor grill pan to medium-high heat.
Drizzle some EVOO on top of all four of your chicken breasts followed by a good pinch of salt, pepper and lemon pepper seasoning. Rub that around each breast and place on your grill. Grill up about 8 minutes or so on each side.
While the chicken is grilling, make your salsa. In a mixing bowl, combine your red onion, blackberries, chopped jalapeno, chopped tomato and cilantro. Take a fork and lightly mesh this stuff together just a bit (you don’t want it to break up too much). Cover and refrigerate until you’re ready to serve.
Once your chicken is grilled to perfection, plate and then top with your salsa.
Easy as that!
Because…who just wants boring chicken for dinner??? Not me!

When I’m not making anything fancy, I actually prefer a meat with two dishes. But this looks much better than plain chicken breast. So colourful!
