Oh my. You’re going to want to make this for dinner. Like tonight.
This summer, we had an appetizer at a restaurant of burnt ends with bleu cheese crumbled over the top and it was insanely delish, so I thought I’d recreate it into an entree. Saucy brisket with crumbled bleu cheese and chopped green onions? It was a huge hit on our table! And bonus…it’s a slow cooker recipe, so you barely have to do any work. #score
This recipe serves four to six (depending on how big your brisket is).
Shopping List
1 (2 to 3 pound) brisket (I get them flat trimmed)
lots of Kosher or sea salt and coarse black pepper if you have it
garlic powder
vegetable oil
1 quart of beef stock
1 cup BBQ sauce
1 cup of ketchup
1 tablespoon mustard
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 (8 oz) can of tomato sauce
crumbled Bleu cheese to garnish (buy a good quality one!)
chopped green onions to garnish
Burger buns
Remove your brisket from the fridge and allow it to come to room temperature just a bit. Next, rub it generously with salt, pepper and garlic powder (several tablespoons of each) on both sides. Next, in a large pot over medium-high heat, drizzle in a few tablespoons of vegetable oil. Place your brisket down in the veggie oil to brown up on one side. After about four or five minutes, flip it over to brown up on the other side. Next, place your brisket in the slow cooker and pour your stock down on top. Cover and cook on low 6 to 10 hours or on high 3 to 4 hours.
About 30 minutes before you’re ready to eat, remove the brisket from the slow cooker to a cutting board and drain your slow cooker. Shred up your brisket with a knife and fork and then place it back inside the slow cooker. Add the BBQ sauce, ketchup, mustard, Worcestershire sauce, brown sugar and tomato sauce down in the slow cooker and cover and cook on HIGH for another 20 to 30 minutes (or low if you want to cook it longer).
When you’re ready to eat, top your burger buns with the saucy brisket, crumbled bleu cheese and chopped green onions.

I never tried blue cheese with brisket before. I don’t really like blue cheese, but I could see this being such a great combo for one of my friends!
