Winner, winner…I have a chicken dinner!
The other night, I wanted a quick and simple chicken dinner. My kids love chicken, they love roasted sweet potatoes…and I love any excuse to pour apple cider into a recipe, so this was perfect for us. This chicken cooks up right on the stove while the sweet potatoes crisp in the oven. Easy as can be!
This recipe serves four.
Shopping List
2 large sweet potatoes, diced into cubes (we left the skin on our potatoes)
Extra Virgin Olive Oil (EVOO)
coarse black pepper
sea salt or Kosher salt
4 chicken breast halves (or however many you need for your family)
garlic powder
1 large onion, chopped
2 apples, chopped (we used Granny Smith)
1½ cups apple cider
1½ cups chicken stock
chopped parsley or cilantro to garnish
Preheat your oven to 425 degrees.
Cover a baking sheet with foil and spray with Pam (for easy clean up!). Spread your cubed sweet potatoes down over the prepared baking sheet. Drizzle a liberal amount of EVOO over the tops of your potatoes (about 1/4 cup) followed by a few generous pinches of both salt and pepper. Toss the potatoes so that they’re equally covered in EVOO and seasoning. Pop them in the oven and roast about 15 minutes before quickly opening the oven and tossing them and then roasting them another 15.
Meanwhile, in a large skillet over medium-high heat, add in a few tablespoons of EVOO. Take each chicken breast and sprinkle salt, pepper and garlic powder on both sides. Get the skillet nice and hot and then carefully place your seasoned chicken down inside. Brown up the chicken on one side (about 5 minutes…when the chicken comes up easily, it’s ready to be flipped) and then brown up the second side. Next, add your chopped onion and apples to the skillet and sprinkle them both with some s&p. When your chicken is browned on both sides and your onions are starting to get tender, pour in your cider and stock. Bring this mixture up to a bubble and then turn the heat to low and simmer your chicken, onions and apple about 20 minutes.
When you’re ready to serve, remove the potatoes from the oven and serve hot alongside a piece of chicken and some onions and apples (they will be very tender after simmering in the liquid). That’s it! A chicken dinner everyone will love!
