Throw in the slow cooker first thing in the morning and forget about it? Yes.
Family favorite? YES!
Why is it that if you put it on rice, my family eats it up? Yummy chicken over rice and dinner is done. Easy, easy, easy for your busy weeknight. Enjoy!
This recipe serves four.
Shopping List
1 pound of boneless chicken breasts
1 (14 oz) can of diced tomatoes
1 can of chipotle and adobo sauce, divided (you will remove and chop two plus use some of the sauce)
1 tablespoon chili powder
1 (15 oz) can black beans, rinsed and drained
2 (8 oz) cans of tomato sauce
salt and pepper
about 4 cups of your favorite rice, cooked and ready to eat (we used wild rice)
shredded cheddar to garnish
sour cream to garnish
chopped green onions to garnish
In your slow cooker, add in your chicken, diced tomatoes, 2 of your chipotle peppers (chop them and then you can freeze or refrigerate the rest) along with about a tablespoon of the adobo sauce in the can, chili powder, black beans and tomato sauce. Add in a big pinch of both salt and pepper. Cover and cook on low 7 to 8 hours or on high 3 to 4 hours.
When you’re ready to serve, take the lid off of your slow cooker and shred your chicken up using two forks. Next, assemble: add your cooked rice to the bowl, followed by your chipotle chicken mixture and then your garnishes. Easy as that!

I always put defrosted chicken in, but you can certainly add frozen. They both cook right up!
