It’s time for another Sheet Tray Supper!
Gosh, I love these so much!! These are seriously like some of my family’s very favorite meals. All you need is a side of ketchup and dinner is done. PLUS, it is SO SIMPLE TO CLEAN UP! Throw away the foil and the kitchen is clean too. If you missed my other Sheet Tray Suppers, here you go…
CHICKEN FAJITA TACOS
ITALIAN SAUSAGE & EGGPLANT
SAUSAGE, POTATOES & VEGGIES
This one was CRAZY easy because Andrew and Smith were at baseball practice, so I was just making this for the girls and me. I legit just put four things on the tray, drizzled olive oil over the top (and a little maple syrup!), added salt and pepper and was done. So, so, so EASY!

This recipe serves as many as you want! Just load your baking sheet up with as much as your family needs for the night.
Shopping List
Italian Sausage (we used a chicken sausage), either left whole or cut into pieces
1 red onion, chopped
2 sweet potatoes, cut into strips
a handful of Brussels sprouts, sliced in half
Extra Virgin Olive Oil (EVOO)
salt and pepper (I love a good Kosher salt)
maple syrup
Preheat your oven to 400 degrees.
Line a baking sheet with foil and then spray with Pam (for easy clean up!). Line up your meat and veggies on your baking sheet (try as hard as you can not to over-crowd). Drizzle a very liberal amount of EVOO down over everything (several big tablespoons) and then sprinkle on a very generous pinch of both salt and pepper. After that, I drizzled just a very little bit of maple syrup over the sweet potatoes to give them an added sweetness.
Place your tray in the oven and roast for about 40 minutes.
When you pull your try out, your veggies will be tender and your sausage cooked to perfection.

Have you used the Reynolds Wrap non-stick foil…it’s amazing, best invention ever!!!! No need to spray everything comes right off!! Can’t wait to try this recipe!

Looks delicious! I do prefer not to use foil tho. Aluminum could leach into the food and unless recycled it seems wasteful. Would love to find a way to do this without foil.

You can put it right on your baking sheet! I just like foil for easy clean up, but you totally can put it right on the sheet.

Made this tonight, without the onions, and it was SOOO good!!! The whole family loved it (or found parts about it to love:) I used Al Fresco brand sweet Italian chicken sausage. Served it with couscous.
