It’s the first day of summer over here! We are PUMPED!!!
For our favorite summer holidays, we always like a dessert with a little red, white and blue…or in this case, blueberry. An easy no-bake pudding pie is simple enough for kids to almost make on their own! And if your kids are like my kids, they’ll all want to be the one to pulse the crumbs together for the crust. From beginning to end, this recipe is perfect for your July 4th!
From my house to yours, HAPPY FRIDAY!
This recipe makes one pie.
Shopping List
about 1 1/2 cups of crushed Nilla Wafers (about 20 or so)
6 tablespoons of melted butter
1 (3 oz) box of instant vanilla pudding
1 cup of milk
1 (21 oz) can of strawberry pie filling
Whipped Cream or Cool Whip
Fresh blueberries to garnish

To make the crust:
Crumble your Nilla Wafers directly over your food processor. Pulse the crumbled cookies until they are fine. Add in your melted butter and pulse until it’s all combined. Remove the mixture and pat it inside the pie plate. Make sure you pat it up the sides as well as across the bottom. Freeze about one hour before filling.
To make the filling:
In a large mixing bowl, whisk your dry vanilla pudding mix and milk about two minutes. Whisk in your strawberry pie filling until just combined.
Remove your crust from the freezer and pour the strawberry pudding mixture down over the top.
Cover and refrigerate at least 4 hours up to 2 days.
Remove from fridge and garnish with a little whipped cream and some fresh blueberries.

Any tips on having this treat be a pie consistency? I followed the directions but mine turned out completely gooey. It still had good flavor but the crust didn’t set up at all so it all came out in a scoop. I may have to stick to a pre-made crust.

A pre-made crust might help you out. I’m sorry! That’s a bummer! How long did you let it sit before slicing into it?

How did you get such a red color? Once we mixed the pie filling and the pudding the color isn’t any where close to the red showing in the picture.
