Lookin’ for a yummy side to share on Thanksgiving that’s a little less than traditional? Welcome to my Cheesy Chipotle Bacon Potato Casserole. It’s just like a traditional Loaded Potato Casserole, but with a little pizzazz. It’s not super spicy, just super flavorful.
Okay, Meagan (who has eaten my food a gazillion times) declared this HER FAVORITE RECIPE EVER. Ever. And she’s already asked me for the recipe to make it herself. You should probably make it too.
Cheese, bacon, green onions and chipotle peppers in one potato casserole? Yes, please! No boring sides for this Thanksgiving!

This recipe makes enough for one 9×12 baking dish.
Shopping List
1 (32 oz) bag of frozen diced hash browns (keep frozen)
1 (14 oz) can cream corn
½ cup butter, melted
1 (8 oz) container sour cream
2 cups shredded Mexican blend of cheeses
12 slices of bacon, cooked to crisp and crumbled
2 tablespoons chili powder
1 can of chipotle peppers in adobo sauce (you’ll use three of the peppers {chopped} and about a tablespoon of the sauce)
about 8 green onions, chopped
a big pinch of both salt and pepper
Preheat your oven to 350 degrees.
Grease (I used Pam) a 9×13 baking dish. Set it aside.
In a large mixing bowl, add all of your ingredients and toss them together. Pour this mixture down into your prepared baking dish and pop in the oven for about 40 minutes. The edges will be browned and the whole thing bubbly when you’re ready to take it out. Remove from oven and serve immediately.
It really couldn’t be simpler! Whether you serve it with turkey or ham, it will be a hit!

How hot do you feel this is? We are kind of whimpy about heat and this seems to have a lot of those peppers and sauce in this dish. I like a bit of heat but not that overwhelms the flavor or burns in my mouth. Thanks for your opinion!

I would say not hot…flavorful, but not hot. You can totally use less chipotle peppers though!

This sounds so yummy! Love a good potato casserole. Made your pumpkin marshmallow frozen pie last weekend for our annual early Thanksgiving dinner. It was a hit. Only problem, our friend also wanted to know if I also made the famous coconut pie(Mix And Match Mama’s coconut cream pie) that I always make for him when he visits. He says that it is the best coconut pie that he has ever tasted and I have to agree. Thinking that I should put the coconut pie at the top of the menu.

So I’m going to attempt to make this with radishes… yes, radishes… I’m trying to cut down on my carbs and EVERYONE (who are these people really… lol) says that radishes when fixed like this, roasted. taste like potatoes. I figure there is enough flavor in this dish that I’m gonna try it. Fingers crossed it works if not, I’m definitely making this your way for sure!!! Thanks for this recipe!!
