I love an easy SLOW COOKER supper during the week! For this one, I just bought two bags of frozen turkey meatballs from Trader Joe’s and added them in along with a few ingredients, covered, let it cook all afternoon and then served it over some yummy rice we bought at Costco (it’s Seeds of Change Quinoa and Brown Rice). I mean…easy as that, right?!
This recipe serves 4 to 6.
Shopping List
2 bags of frozen meatballs (I used turkey meatballs but you can use chicken, beef or pork too)
1 (8 oz) jar of salsa (whichever kind you prefer, we used mild)
1 (15 oz) can of black beans, rinsed and drained
1 (14 oz) can of diced tomatoes
1 (8 oz) block of cream cheese
chopped green onions to garnish
rice or another grain to put underneath
In your slow cooker, add in your meatballs followed by the salsa, black beans and diced tomatoes. Cover and cook on low about 6 hours or high for 2 to 3 hours. The last 30 minutes of cooking, remove the lid and add your cream cheese inside the slow cooker. Cover and cook the rest of the time on high.
When you’re ready to serve, remove the lid and stir everything together (your cream cheese will have melted in). Ladle your meatballs on top of your rice, garnish with some chopped green onions and you’re ready to enjoy.

I just tried Trader Joe’s pepper jelly and ketchup over those meatballs in the crock pot last week (thanks to the comment section of your post!) and loved them! Going to have to try this recipe next week!

Hi – I made these today with two bags of the Trader Joe’s meatballs. It was so good! We substituted the Trader Joe’s vegan cream cheese due to dairy allergies. Great fun different recipe. My husband loved it!
