Happy Tuesday, friends!
Okay, I decided to post my Mac & Peas recipe because I thought it would make a fun addition to your kiddos’ St. Paddy’s Day lunch or dinner. A little mac and a little green…a lot of fun for your family!
This recipe serves four as a main dish or more as a side.
Shopping List
1 pound elbow pasta
3 tablespoons extra virgin olive oil (EVOO)
1 shallot, chopped
3 tablespoons flour
2 cups milk
2 cups shredded sharp cheddar cheese
2 cups frozen peas

Bring a large pot of water up to a boil and then drop in pasta. Cook about 6-8 minutes or until pasta is al dente. Drain and reserve.
While pasta is cooking, add EVOO to a second pot along with your shallot and saute about 4-5 minutes. Next, whisk in flour and cook another minute. Then whisk in milk. Let sauce thicken together over medium heat about 10 minutes or until sauce is thick and bubbly. Whisk in cheese and then once it’s melted, stir in your frozen peas and cook about two minutes. Stir in one big pinch of salt and pepper at the end.
Toss reserved pasta with sauce, serve immediately and enjoy!

Throw in some cut-up hotdogs (or sausage), and sprinkle with crushed crackers or chips and this is one of my favourite comfort meals!
