My kiddos don’t love all vegetables, but they do all love broccoli. Want to know what they love more than just broccoli? Broccoli with melted cheese all over. My Trees & Cheese Quesadillas are an easy lunch, a quick dinner and a fun GREEN little bite you might want to serve on St. Patrick’s Day 🙂 . Because that’s just fun, right?
This recipe makes 8 quesadillas.
Shopping List
4 flour tortillas
about 2 cups of chopped broccoli florets
1 (4 oz) can of chopped green chiles
1 cup of shredded cheese, I used a Gruyere
4 flour tortillas
about 2 cups of chopped broccoli florets
1 (4 oz) can of chopped green chiles
1 cup of shredded cheese, I used a Gruyere
Preheat your indoor griddle or a big skillet to medium-high heat. Spray lightly with cooking spray.
Lay out two of your flour tortillas. Place one cup of broccoli across each tortilla. Add a few tablespoons of chopped green chiles and a sprinkle of cheese. Take your other two tortillas and place them on top of your broccoli mixture.Place each quesadilla in your skillet one at a time. Brown on both sides (about 4 minutes or so each side). Remove once browned up and slice in half and then in half again (to give you four from each set). Repeat with your other quesadilla.

Have you tried Green Giant’s frozen veggie tater tots? Their broccoli tots are AMAZING. I think your kids would really enjoy them!
