Ohhhhhhh! There are few combinations in life I love more than Buffalo sauce and ranch dressing!! You guys know how much I love to get the cobb salad at Chick-fil-a and use both their creamy ranch along with two packs of their Zesty Buffalo Sauce (try it!!). Well, I decided to take my basic Chicken Tortilla Soup recipe and give it a little zip by adding both ranch and some Buffalo sauce. It is a winning combination!! You must try it this week!! Bonus, it’s a slow cooker recipe too 🙂 .

Buffalo Ranch Chicken Tortilla Soup
- Prep Time: 5 minutes

Description
Give basic Chicken Tortilla Soup a little kick by adding both ranch and Buffalo sauce to the mix!
Ingredients
- 1 pound of boneless, skinless chicken breasts
- 1 (14 oz) can of diced tomatoes
- 1 (1 oz) packet of Ranch seasoning mix (on the salad dressing aisle)
- 1 (1 oz) packet of taco seasoning
- 1 (14 oz) can of cream corn
- 1 (8 oz) can tomato sauce
- about 3 tablespoons of Buffalo sauce (more if you really love it!)
- ¼ cup ranch salad dressing
- shredded cheddar cheese to garnish
- chopped green onions to garnish
- crushed tortilla chips to garnish
Instructions
- In your slow cooker, layer in your chicken, diced tomatoes, ranch seasoning, taco seasoning, cream corn, tomato sauce, Buffalo sauce and ranch salad dressing.
- Cover and cook on low 6 to 8 hours or on high 3 to 4 hours.
- When you’re ready to serve, remove the lid and shred the chicken right inside the slow cooker with two forks.
- Ladle soup into bowls and garnish with shredded cheddar, chopped green onions and tortilla chips.
Notes
We use gluten-free ingredients to make this soup g-free. I love to add extra Buffalo sauce at the end to the bowls of those in my family who really like it flavorful!

I LOVE anything with Buffalo sauce and ranch, too. But I have a basic slow cooker question: how do you keep your chicken breasts from becoming dry? Mine is always so dry, my husband told me to stop cooking with chicken breasts! There must be a trick! Thanks in advance!

Hi Cindi,
The trick for me is to reduce the cooking time with chicken. I find that it is cooked through after six hours on low so I never go past that now. It is inconvenient because I’m gone at work longer than that so I try to plan my chicken slow cooker meals for Sat or Sun. Hope that helps!

I know that this adds a step but what if you were to wet brine the chicken first? We do this when we BBQ or oven bake ours and it really makes a difference.

I think for a slow cooker soup that poaches all day, you wouldn’t be able to tell any difference…but try it and let me know if I’m wrong!

Cindi, do you always cook yours in liquid / a sauce? I LOVE slow-cooked chicken breast for that reason, as it tends to be super moist! I’m wondering if you’re not using enough liquid or covering the chicken in a sauce, etc? Or maybe your slow cooker is running too hot? I always cook mine covered in broth (or sometimes just water) with a little seasoning, then shred it and add to recipes… or if I’m making the whole recipe in the slow cooker, I just make sure to cover the chicken with the sauce I’m using. Hopefully this helps! 🙂

I have the same problem! Maybe I need that nice William Sonoma slow cooker? I use my Instant Pot for any recipe that calls for shredded chicken. The IP always cooks the chicken perfectly and it’s never dry.

I’ve baked chicken breasts with it, or just mixed it in with precooked chicken and popped it in the microwave to heat it up. It’s also good to dip veggies in. Love it!
