Well, these aren’t great pics, but so many of you have asked me about this new protein pancake recipe that I thought I’d throw a post up really quickly with the details and then take better pics later. …turkey bacon with a drizzle of honey on top. They are so delish and full of protein too!
My friend Shari gave me the recipe, and it’s super simple. I add one mashed banana to mine, and it makes 3 pancakes. I always eat one (with something else) and then save the other two in the fridge. On subsequent days, I pop those in the microwave for 30 seconds and they’re good to go. I’ve even frozen them and put them in the toaster too and that also works. When I don’t use a banana, I get two pancakes, when I do use a banana, I get three.
Here’s what you do:
In a small bowl, add in 2 egg whites, 1 scoop of vanilla protein powder (I use this one), 1 mashed banana (optional), ½ cup quick cooking oatmeal (we use g-free), and a big pinch of cinnamon. Mix all of that together and ladle it on your griddle or skillet. They don’t take long at all to cook up and you’re good to go.

Two friends of mine wrote this cookbook (Clean Kitchen The Cookbook) and it has a couple of protein pancakes in it. Every recipe is delicious and all clean. The french toast made out of egg whites is seriously to die for!!! There is a pumpkin protein pancake too that I bet you would love. 90% of the food we eat are meals from this book. All 4 of my children love it all too and that is a blessing. Just thought I would share!

Have you ever tried the “double stuff” flavor of this brand of protein powder? Does the vanilla have an aftertaste from the sucrolose? It’s such a huge tub of powder to commit to, I wish there was a sample size.

I hate the after taste you get from protein powders and especially bars. This powder, in my opinion, has the least amount of that taste. In the pancakes, you get zero after taste. Zero!

I make something very similar, only I add in some plain Greek yogurt to the batter as well. I have also played around with different oats and I actually really enjoy making them with gf rolled oats as well! Drizzle a little natural peanut butter on top of the pancake along with real maple syrup and you’ve got one delicious and healthy pancake breakfast ?
