Well, these aren’t great pics, but so many of you have asked me about this new protein pancake recipe that I thought I’d throw a post up really quickly with the details and then take better pics later. If you’ve been following along on Instagram, then you’ll know that I’ve been making these for breakfast every day…
…I typically eat one along with either a re-heated sausage ball or two pieces of…
…turkey bacon with a drizzle of honey on top. They are so delish and full of protein too!
My friend Shari gave me the recipe, and it’s super simple. I add one mashed banana to mine, and it makes 3 pancakes. I always eat one (with something else) and then save the other two in the fridge. On subsequent days, I pop those in the microwave for 30 seconds and they’re good to go. I’ve even frozen them and put them in the toaster too and that also works. When I don’t use a banana, I get two pancakes, when I do use a banana, I get three.
Here’s what you do:
In a small bowl, add in 2 egg whites, 1 scoop of vanilla protein powder (I use this one), 1 mashed banana (optional), ½ cup quick cooking oatmeal (we use g-free), and a big pinch of cinnamon. Mix all of that together and ladle it on your griddle or skillet. They don’t take long at all to cook up and you’re good to go.
Better pics and post to come…but at least, now I have the details for those of you who want to make them too. I love mine with a drizzle of honey. Thank you, Shari!! xx
