Crazy busy day yesterday, so I thought I’d leave this little recipe from last year here for you to check out. Um, have you made these?! My PB Honey Oatmeal Bites work at breakfast, as a snack, for dessert…are gluten-free (if you use the right kind of oatmeal) and totally delish.
My kiddos love them when they get home from school, and I love them mid-day with my afternoon coffee. Bonus, they’re no-bake which makes them oh so easy!!

Peanut Butter Honey Oatmeal Bites

Description
Whether you enjoy these at breakfast, as a snack or for dessert, they’re full of deliciousness!
Ingredients
- 2 cups old fashioned rolled oats (we use Bob Red Mill’s gluten-free)
- 1 cup creamy peanut butter
- ¼ cup honey
- 1 cup chocolate chips
Instructions
- Lightly spray a baking dish or cookie sheet with non-stick spray. Set aside.
- In a mixing bowl, combine with a spoon, your oats, peanut butter and honey. Stir in your chocolate chips and combine. Shape this mixture into about 10 golf ball-size bites and sit each one on your prepared baking dish.
- I like to pop these in the freezer for about 20 minutes before serving. You can leave them in there longer and then just pull them out and allow them to come to room temperature about 10 minutes before enjoying them at a later date too.

Do you store these (past the initial 20 min) in the freezer, or in the fridge?

Either! I typically pull them from the freezer as needed and microwave them a minute but you can certainly pop them all in the fridge.

We make these too! But we add flax seed and a little sea salt! Absolutely divine!
