I mean…here’s the deal. My kids are pretty good about our family eating gluten-free…but occasionally, I will hear moans and groans about what’s for dinner and how it’s not “fun” like everyone else (I think they think everyone else is at Chick-fil-a every night filling up on gluten except for them). So, this suuuuuuuuper easy supper idea came from me trying to make dinner a bit more kid-friendly one evening.
Here’s the problem though?
They loved it and now, they want it weekly.
If you need a quick dinner idea to please your picky people or just something super simple to whip up on a weeknight, this recipe is for you.
Bonus, if your family only eats gf too, this meal is perfect for you too! xx
PrintEasy Weeknight Frito Pie
- Prep Time: 20 minutes
- Cook Time: 10 minutes
- Total Time: 30 minutes
- Yield: 4 to 6 1x
Description
A super quick, family-friendly (and gluten-free!) meal to satisfy even the pickiest eaters (and the mom with little time on her hands to put dinner together!).
Ingredients
- Corn chips (like Trader Joe’s Corn Dippers or Fritos)
- 2 pounds of ground beef
- Extra Virgin Olive Oil (EVOO)
- 1 red onion, chopped (reserve some for garnishing)
- salt and pepper
- 1 tablespoon chili powder
- 1 (12 oz) can of tomato paste
- 1 (14 oz) can cream corn
- 1½ cups shredded cheddar cheese
Instructions
- Preheat your oven to 400 degrees.
- Lightly spray your 9×12 baking dish with a non-stick spray. Sprinkle corn chips over the bottom of your baking dish until it’s covered. Set aside.
- In a large skillet over medium-high heat, brown up your ground beef in a drizzle of EVOO until browned and crumbly. Add in your chopped onion and a big pinch of both salt and pepper. Let the onions get tender (about five minutes) and then stir in your chili powder followed by your tomato paste and corn.
- Reduce the heat to low and simmer together about 8 to 10 minutes. Stir in your shredded cheese.
- Once the cheese is melted, pour this mixture down over your baking dish and pop it in the oven to bake up about 10 minutes.
- Remove from oven and garnish with remaining chopped red onions and serve.
Notes
We have been serving this with either roasted broccoli or a big salad. Easy!

What soup would be a goid substitute for cream corn?
Thank you.
Mix and Match Mama says
You can just sub can or frozen corn. Trader Joe’s has the BEST canned corn!!

Would love some of your veggie recipes!

Can you make this with frozen or regular canned corn instead of creamed? I have celiac and it can be hard to find gluten free creamed corn.
Mix and Match Mama says
You can totally use either to substitute!

I made this last night, and my whole family loved it. Thank you, Shay, for the delicious recipe. I used Fritos Scoops. I used the cream corn you called for, and I drained and added a small can of regular corn as well (about 12 oz). I served it with a little sour cream on the side and a green salad.
