…or I guess I should say “in my bowl” 🙂 .
These are our super simple TACO BOWLS that my whole family loves. We love them because they’re versatile (everyone can add in exactly what they want), they’re super filling, it’s an easy way to get a lot of protein and if your family needs to eat at separate times, you can always keep the taco meat warm in the slow cooker. #winning
Here’s what we do:
1: I make a bunch of taco meat with lean ground beef, a little salt and pepper and a lot of chili powder.
2: I microwave either Trader Joe’s frozen jasmine rice or the frozen rice from Walmart. Easy.
3: We make a quick avocado mash with avocados, a red onion and some coarse sea salt.
4: We build our bowls! RICE + TACO MEAT+ AVOCADO MASH + any other toppings you love (like chopped green onions, sweet jalapeno slices, a drizzle of siracha and a few corn dippers!)
Easy as that!

Taco bowls are such a great staple! I love using sweet potatoes as a base instead of rice too. I just cube them up and throw them in the air fryer. They cook so quickly that way! I’ll use them as a base for an egg bowl too. So yummy!
