This recipe is super simple to double too.

Easy Weeknight Meat Sauce with Gnocchi
Description
Who doesn’t need an easy weeknight recipe? Grab some ground beef, a jar of spaghetti sauce and some pesto along with a package of gnocchi and bam, dinner is done. Add a side salad and you have the simplest weeknight supper. Enjoy!
Ingredients
- 2 pounds of ground beef
- Extra Virgin Olive Oil (EVOO)
- 1 red onion, chopped
- 1 pint (or so, you can add more!) of sliced mushrooms (I like using baby Portobello)
- salt and pepper
- 1 (7 oz) jar of pesto sauce
- 1 (24 oz) jar of spaghetti sauce
- 1 (16 oz) package of fresh (not frozen) gnocchi
- torn basil and/or grated Parmesan cheese to garnish, optional
Instructions
- In a large pot over medium-high heat, brown up your ground beef in a big drizzle of EVOO. Meanwhile in a skillet, sauté up your chopped onion and mushrooms in a bit of EVOO too.
- Once your ground beef is browned and crumbly, add in a big pinch of salt and pepper. Once your onions and mushrooms are caramelized and browned, add in a big pinch of salt and pepper. Pour this mixture into your ground beef (do not rinse the pan). Stir together. Pour your pesto and spaghetti sauce into your ground beef and mushrooms, reduce heat to low and simmer.
- Meanwhile, in the same skillet you used for your onions and mushroom, add in your fresh gnocchi over medium-high heat. Brown it up a few minutes, stirring frequently to make sure all sides get a little browned. Once your gnocchi is tender, turn the heat off and serve.
- You can either stir your gnocchi into your meat sauce or plate it first and then add your meat sauce on top.

Between the jar of spaghetti sauce and the pesto, it’s saucy. You can always add more of either/both too!
