If you are looking for an easy, delicious, very FALL dessert, try my APPLE PECAN CUPCAKES WITH BOURBON FROSTING.
To quote my husband “holy crap, this is good”. Ha!
Now, if you don’t keep bourbon at home or if you want to make these alcohol-free, you can certainly omit the bourbon (details in the recipe), but if you want an extra yummy adult dessert sure to please, here you go.

Apple Pecan Cupcakes with Bourbon Frosting

Ingredients
- 1 box of spice cake mix
- ½ cup of water
- ¼ cup vegetable oil
- 3 eggs
- 1 cup of grated apple (see note below)
- ½ cup of pecan pieces
- 1 (8 oz) package of cream cheese, softened
- 2 cups of powdered sugar
- 1 shot glass of your preferred bourbon (I use Bulleit Bourbon) or you can use about a tablespoon or so of milk instead.
Instructions
- Preheat your oven to 350 degrees. Line your muffin tin with cupcake liners (I can get 2 dozen out of this recipe). Set aside.
- In a mixing bowl, combine your cake mix, water, vegetable oil, and eggs with an electric mixer. Next, stir in your grated apple followed by your pecan pieces.
- Add this batter to your prepared muffin tins and pop in your oven.
- Bake about 25 minutes or until a toothpick inserted into the middle comes out clean. Remove from oven and allow to cool completely before frosting.

To make the frosting, beat your cream cheese and powdered sugar until mostly combined with an electric mixer. Slowly beat in your bourbon until smooth (or milk). Add more liquid if it’s too thick or more powdered sugar if it’s too thin. Once your frosting reaches the desired consistency, frost your cooled cupcakes.
- Frost and enjoy! When not enjoying, keep these cupcakes in the fridge.
Notes
Simply omit the bourbon in the frosting to keep this recipe alcohol-free. To grate your apples, I take my cheese grater and just grate my (unpeeled!) apple over the top. It will grate like cheese. You need about one cup.
