When we were first married, I packed up my Saturn coup with as much stuff as I could and moved across the country with the new hubby. In my loot, I only packed two cookbooks. Needless to say, I pretty much cooked every recipe in each of them out of necessity. When I first stumbled onto this sweet sloppy joe recipe in my Southern Living Easy Weeknight Favorites book (one of the two), I was apprehensive. We didn’t eat sloppy joes growing up. They seemed…well…messy. Eating messy food is a lot of hard work (think ribs!), so I thought why not make it opened face, eat it with a fork, and go from there. Well, let me tell you…we’ve been eating these sloppy joes on a regular basis ever since. In fact, it’s one of those recipes I have memorized and can whip together in minutes. I like these guys so much, I’ve even entertained with them. (People have more fun eating at your house when the food is simple and not fussy!) This dinner can go from fridge to table in less than 20 minutes…super yummy and super easy…that’s what’s for dinner tonight.
1 pound ground beef
1 small onion, chopped
1 (10 3/4 ounce) can tomato soup, undiluted
1 (8 ounce) can tomato sauce
1 cup ketchup
1/4 cup brown sugar
2 tablespoons Worcestershire Sauce
1 teaspoon prepared mustard
1/4 teaspoon garlic powder
Brown ground beef in skillet, add in onion and saute a few minutes until tender. Stir in soup and next six ingredients. Simmer 10 minutes, stirring often. Serve on buns.
That’s it! OK, here are a few change-ups we do around our house…
1. Sometimes instead of adding the onion in with the ground beef, I’ll saute the onion in a separate skillet and then top the finished sloppy joe with sauteed onion. Sooooo good!
2. I also sneak shredded carrots into the sloppy joe mixture to give my family one more veggie for the day…they don’t know this, so don’t tell :).
3. I’ve also made this in advance then transferred it to my slow cooker to cook on low 4-5 hours.
