If you know me, you know that I spent 18 long months sick and pregnant. You know that I had back to back pregnancies and was sick, sick, sick during both. You know that one of my favorite phrases is “pregnancy sucks”. (Which is quite ironic since I spent two years trying to get pregnant in the first place!). I say all of this because one of the things pregnancy ruined was my ability to eat plain grilled chicken. My youngest is two and a half and I still can’t do it. However, hubby loves him so grilled chicken, so if I’m eating it, it has to be smothered in a sauce, pesto, salsa or chutney. This my friends, is my Tomato Basil Salsa to go up on top of grilled chicken. It would pair lovely with fish or pork too. No cooking required, just the whiz of your food processor.
Shopping List
4 chicken breasts
8 plum tomatoes, roughly chopped
3 cloves garlic
1 large handful of basil
3/4 cup balsamic vinegar
2-3 tablespoons Extra Virgin Olive Oil (EVOO), plus a little more for the chicken
Lots of Salt and Pepper
Drizzle each chicken breast with some EVOO and lots of salt and pepper. Grill over medium-high heat on the outdoor grill or on your indoor grill pan 5-6 minutes each side. Remove to serving platter.
In the bowl of your food processor, toss in tomatoes, garlic, basil, vinegar, EVOO and salt and pepper. Pulse until your get a nice salsa consistency. Taste and see if you need a pinch more salt and pepper. Spoon over chicken.
That’s it! Super simple and delicious. I forget there is a grilled chicken under all of that tomato goodness :).

I feel the same way about big pieces of chicken (I prefer it shredded or chopped now) after my pregnancies! And my boys are 7 and 9. I wasn't as sick as you were but chicken has never been the same for me!

I made this as written but the topping turned out horrible. Are you sure you meant 3/4 CUP balsamic vinegar?

Yes, the reason you use so much is because this recipe is making a big batch of salsa. Did you use 8 big tomatoes? If you wanted to make less of the salsa or you didn't want to use as much Balsamic, you could always reduce the amount. I'm sorry you didn't enjoy it!

AHH! I used the wrong size tomatoes! It was basically a liquid when I did it but I think the problem was the tomatoes I used. I will try it again and I'm sure I will love it! I make your recipes at least 3 days a week and love everything. I figured I did something wrong. Thank you!! 🙂
