Yes. Yes. Yes. A no bake cookie. Not original or super impressive but gosh…I had to make them because they’re my faves, so I thought I’d share my little version with you. I like to omit the usual cocoa powder in the cookie and instead add a random assortment of “chips” instead (peanut butter, chocolate, white chocolate and/or butterscotch). I think it gives the cookie a little more texture and variety. In these little gems, I added in chocolate chips and butterscotch chips. Dive in!
Shopping List
2 cups sugar
1 stick butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 cups oatmeal
1 cup chocolate chips (or try a mixture of chips!)
Wax paper for cooling
In a heavy saucepan over medium-high heat, bring sugar, butter and milk to a boil. Boil about a minute, then stir in peanut butter, vanilla and oatmeal. Remove from heat and fold in your chips.
Drop by the tablespoon full on to wax paper to finish cooling (and they’ll harden up). Once cooled, store in an airtight container.
That’s it! You could go crazy and add nuts and/or dried fruit in there as well. An easy cookie for a busy lady…that’s the kind I like best.
For a quick and simple way to mix and match this…just use butterscotch chips instead of chocolate chips. Yummy!

YUM! I adore no bake cookies. While I was at OU, the cooks in the Kappa house made a version of these (the ones with cocoa)every Friday. They are one of the reasons I gained 10 pounds my sophomore year of college. They are so good it was ALMOST worth it.

I love reading & trying your different recipes. Even some of your pics of food that I usually don't like look so good that it makes me contemplate giving it a try. I have to try this cookie! My boyfriend really shouldn't eat too much peanut butter. Do you think that it would work if I substitute hazelnut spread in place of the peanut butter?

I'm not sure hazelnut spread would bind the cookies together quite like peanut butter. I think it would taste delicious…but i'm not sure if it would stick together as well. Try it out and let me know!

I may hate you. I grew up on the cocoa style of these cookies, and they are delish. So I made these on Sunday, and I used the peanut butter and milk chocolate chips. I can't stop eating these. Had one for breakfast. Brought 2 to work for later, but I swear I hear them screaming at me from the refrigerator! Do you hear them too?
