
You guys, St. Patrick’s Day is just around the corner which means, I am over here thinking GREEN!
Mades and I made my CREAMY MINT BROWNIES the other day, and my family DEVOURED them.
I love making recipes like this with Madeley because the first time I made this one and shared it with you was BEFORE we met her. In fact, I’m pretty positive it was exactly around this time in 2015 that Andrew and I decided to adopt again (about six weeks after bringing Ashby home), which makes being in the kitchen with my littlest love extra extra special.

Creamy Mint Brownies

- Yield: about 12 brownies
Description

Ingredients

1 box chocolate cake mix

½ cup vegetable oil

2 eggs

1 cup mint chocolate chips

1 (8 oz) package cream cheese, softened

2 cups powdered sugar

1 splash of milk

1 teaspoon peppermint extract

2 or 3 drops green food coloring
Instructions

Preheat oven to 350 degrees.

Grease (I use Pam) a 9×13 baking dish. Set aside.

In a large mixing bowl, combine cake mix, vegetable oil and eggs with an electric mixer until creamy. Stir in mint chocolate chips.

Pour batter into prepared baking dish and bake about 10 to 13 minutes or until a toothpick inserted into the middle comes out mostly clean.

Remove from oven and cool completely before frosting.

To make the frosting, beat your cream cheese, powdered sugar and milk with an electric mixer. Add more powdered sugar if it’s too thin or more milk if it’s too thick. Once it reaches your desired consistency, beat in the peppermint extract and green food coloring.

Frost cooled bars and store in the fridge when you’re not enjoying.
Notes
If you can’t find mint chocolate chips, you semi-sweet instead.

Ahhh… I distinctly remember making these for my girl way back when you first posted the recipe! She loved that they were ”just for us” because my husband thinks mint only belongs in gum and toothpaste, ha!
