Don’t judge. This is a recipe. Ok…it’s really just an idea…a very, very basic idea…but it produces killer cookies, my kids wanted them, I had my camera laying around…and thus, now you get to see them on your computer screen. These are my pumpkin spice snickerdoodles and they’re brilliantly simple.
Shopping List
1 package of refrigerated sugar cookie dough (or you could get fancy and make your own from scratch)
1 cup of sugar
2 tablespoon pumpkin pie spice
Preheat your oven to 350 degrees.
In a small bowl, combine your sugar and pumpkin pie spice. Take a walnut sized piece of cookie dough, roll it into a ball and dip it in the sugar mixture. Lay on baking sheet and repeat (leaving about a 2 inch border around each cookie so that they have room to bake and spread out).
Bake 8-10 minutes. Remove from oven and immediately sprinkle a little more sugar mixture on each one. Cool on pan 5 minutes then transfer to wire rack to continue cooling another 5 to 10 minutes.
That’s it. Yes, it’s just a snickerdoodle. Yes, it’s a totally lazy way to bake. But yes, the pumpkin pie spice adds just a little extra something special that will have you coming back for more.
