1 bell pepper (any color), chopped
1 can Rotel
1 tablespoon chili powder
1 can chopped green chiles
1 cup Pepper Jack cheese, shredded (use Monterey Jack for less spicy)
2 cups Tortilla Chips, lightly crushed
Preheat oven to 425 degrees.
In an oven-safe skillet (if you don’t have one, just make it in a regular skillet and then transfer it to an 8×8 inch glass baking dish before baking) saute your chicken, onions and bell peppers about 5 to 7 minutes (your chicken is already cooked, so you’re just heating through the veggies). Stir in the Rotel, chili powder, chiles and cheese. Top with tortilla chips and bake about 15 minutes until the casserole is bubbly.
That’s it! Isn’t that simple?! And it’s really good as well. Simple meals for a hectic holiday season. That’s what the mama needs over at her house. Happy dinner!

When you buy your cookware, each piece specifies if it's oven safe. You just need to make sure the handle doesn't have any rubber or plastic on it. When in doubt, transfer to a baking dish!
