It’s Valentine’s Day! Whether you’re celebrating with your hubby, your boyfriend, your kiddos or your girlfriends…every February 14th needs a simple, special supper.
To start off your Valentine’s Day, you’ll need something a bit spicy…
…my Spicy Spinach Dip is easy, prepared in the slow cooker and delicious!
For your main course, you want something “fancy” without being difficult…
…my Lasagna Roll Ups are the perfect answer. They look fancy and special but they’re so simple to prepare!
You could also have my wonderfully easy Scallops with Risotto for dinner too…
…your love will think you slaved all day (but you won’t!).
And for one more option, you could serve my very popular, Roasted Florentine Meatballs..
…this is one of my all-time most popular recipes. Your sweetheart is sure to love it too.
But what’s a romantic meal without dessert? Don’t despair, a Chocolate Spice Bundt Cake is the perfect ending to a romantic dinner…
Happy Valentine’s Day!
Under the Eiffel Tower with my love.

I can vouch that the spicy spinach dip is one of my most favorite things I've ever eaten of yours. It might even be THE most favorite. Love it.

Could you sub a can of cream of chicken in place of the cream of mushroom for the spinach dip for those who do not like mushrooms or would that throw the taste off?
Rachel Knows Best says
I have made your chocolate spice bundt cake and it was delicious. Everything you posted today looks so good.

I totally think you could sub cream of chicken for cream of mushroom. I think that's perfectly fine! Enjoy!
