Being the Irish girl that I am, I love me some St. Paddy’s Day! On the day that celebrates all things green…I give you my green bundt cake. Two Pistachio pudding mixes are all it takes to turn this basic white cake into Irish green heaven. You and your lads and lassies will love it!
Shopping List
1 box of white cake mix
2 small boxes of instant pistachio pudding
1/2 cup of veggie oil
1 1/4 cups water
4 eggs
1 can vanilla frosting
Green sprinkles to garnish
Preheat oven to 350 degrees
Grease (I use Pam) a 10 inch bundt pan
In mixing bowl, combine cake mix, puddings, oil, water and eggs with electric mixer. Pour into prepared pan and bake 40-45 minutes or until toothpick inserted comes out clean.
Let cake rest on counter in pan 10 minutes. Then, invert the cake onto a serving plate to finish cooling.
Once the cake is cool, frost with your store bought vanilla frosting and add green sprinkles.
Easy and festive! Perfect for March 17th!

Mmmm..this looks fabulous! Pistachio pudding was a favorite of mine as a kid and I still love it to this day. I will definitely be trying this one! 🙂

My mother-in-law gave a me a recipe when hubs and I first married for his favorite cake- it's very similar to this but is a marbled pistachio cake and I think she just sprinkled it with powdered sugar. Alas, allergies had put this one in the archives but I think I'll have to pull it out sometime soon and just let the kids have at it! 🙂
