Some nights, you just need to assemble dinner as opposed to making dinner. This is one of those nights. Within a few minutes, I had a yummy, hearty, satisfying dinner on the table by just assembling a few simple ingredients. I added roasted chicken to my pizza but of course, you could leave it off and keep this meal vegetarian too.
Inspired by a Caprese Salad…one of my favorites, this pizza made dinner time a breeze.
Shopping List
1 store bought pizza crust (or use my homemade version here)
1 jar pizza sauce (it’s on the spaghetti sauce aisle)
3 cups fresh spinach leaves
1 handful of fresh basil
8 to 10 slices of fresh mozzarella cheese
1/2 pound roasted chicken breast from your deli (optional)
Extra Virgin Olive Oil (EVOO)
Salt and Pepper
Preheat your oven to 425 degrees.
On your pizza crust, layer first 5 ingredients in order given. Drizzle EVOO over top of the pizza and sprinkle S&P on top.
Bake about 12 to 16 minutes or until crust is browned and cheese bubbly.
Remove from oven, slice and serve.
That’s it! Simple! Plus, your kiddos won’t even notice the spinach underneath that fresh mozzarella.
Some days, moms just need a dinner they can assemble.

Yummmmm….I love pizza, in variety of flavors. My neice has asked me to do a pizza cookout for all 13 of us for her birthday. This may go on the list. I have to make 6! 🙂 Have you tried a cauliflower crust? So yummy!

Silly question…where in the grocery store do you typically find fresh slices of mozzerella? I can typically find pre-packaged, shredded mozzarella or "balls of mozzarella" soaking in oil…but not fresh slices??

You take a ball of fresh moz and slice it…that's what I did. Of course, you could use the shredded kind if that's all you can find. I find my fresh moz in the specialty cheese department.
