I love eating a burrito but feeling no guilt. I also love eating a burrito that I didn’t have to slave over! We made these ground turkey burritos the other night and they were a huge success! Of course, you could substitute ground beef…but ground turkey breast just makes me think of girl math (if I eat ground turkey, then I can have a bigger bowl of ice cream for dessert).

Shopping List
1 pound ground turkey breast
1 onion, chopped
1 jalapeno, chopped (remove the seeds for less heat)
1 package taco seasoning (or 2 tablespoons of chili powder)
11/2 cups salsa
2 cups cheddar cheese, shredded
Large burrito size tortillas (the package will say burrito size and we used whole wheat)
Guacamole to garnish
Preheat oven to 375 degrees.
In a large skillet over medium high heat, brown your turkey. Once brown, add in your onion and jalapeno and saute about 5 more minutes. Then stir in your taco seasoning and incorporate. Stir in your salsa, reduce heat to low and simmer about 3-4 minutes.
Meanwhile, line a baking sheet with foil (for easy cleanup!), lightly spray it with Pam and lay out 4 tortillas. Top each tortilla with some of your taco meat mixture, then layer on cheese. Fold burrito style (fold in the ends first, then fold over the two sides) and place on the baking sheet seam side down.
Bake about 15 minutes. Remove from oven and top with guacamole.
So easy and so delicious! This is one of those recipes you’ll repeat over and over again.

Love these! We almost always use ground turkey for tex-mex dishes like burritos, enchiladas, etc. All the spices of Mexican food amps up the turkey so well!

I appreciate the girl math! Last week I had gelato after dinner, so I woke up the next morning and did a workout to work it off. Which meant I could have the rest of the gelato for breakfast, totally guilt free 🙂
