Right now, my mom is shaking her head. This is something she would never eat…but me…I could eat this every single day. I love, love, love this sandwich for lunch. Love it! It’s fresh, it’s flavorful, it’s versatile…it’s perfection.
Shopping List
2 pieces of bread, toasted
store bought pesto
1 avocado, mashed slightly
cherry tomatoes, halved
good quality Kosher or sea salt
Take each slice of toast and slather on your pesto. Top with smashed avocado, tomatoes and a healthy pinch of Kosher (or sea) salt.
Simple, right? The salt is what takes this sandwich from fine to divine. A good quality Kosher salt will bring out all of the flavors and make your heart skip a beat. If you’re making this in the morning and traveling to work or school, simply don’t make this open-faced…just top one half with another piece of toast, wrap up and go.
You can also go crazy with the toppings…spinach, bell pepper, chicken, pepperoni…go wild. You are going to love this lunch. Love it!

I love this! I recently tried whole grain toast with mashed avocado topped with salt and pepper and it was so good, i was shocked. But the pesto added is a really nice twist. I plan to try it. Also, i hope you can check out my blog. Its all about healthy eating, but as a busy mom it can be hard so i have lots of tips and tricks to stay healthy You don't look like you need any advice though. Somehow you stay in shape even while making those yummy cakes! lucky u! 🙂
