It’s the 11th Day of Christmas! I’ve had the most fun and I hope you have too!!
We’re going to start off our day with today’s recipe…
…you know what my favorite kind of whoopie pie is? The kind that’s in my mouth that minute.
I.love.whoopie.pies.
I love them. I love how easy they are and I love how every single one I’ve made has turned out perfect!
For this version, I mixed two classics…chocolate and coffee. Just brew you a cup of coffee and let it cool to room temp…simple enough!
Shopping List
1 box chocolate cake mix
1/2 cup veggie oil
2 eggs
1/4 cup brewed coffee at room temp
store bought vanilla frosting
1 tablespoon cinnamon
Preheat oven to 350 degrees
Combine cake mix, oil, eggs, and coffee in a bowl.
Drop by 2 tablespoons onto lined cookie sheet (leave about an inch between each cookie)
Bake 9-10 minutes
Cool on pan 5 minutes, move to wire rack and cool 15 more minutes.
To make the frosting, combine store bought frosting with your cinnamon in a mixing bowl. Take one cookie and place a tablespoon or so of frosting in the center. Press another cookie on top (this will spread the icing out to the edge).

This is a crazy week for the Shulls…we have 3 parties! I am so excited about each of them…but slightly overwhelmed too. I know several of you have been invited to parties that are either potluck or bring an appetizer…so, today’s Meal Planning Monday will work for either occasion! I have some great potluck choices and some great appetizers (both of which could also be dinners…just throw in a salad and dinner is done!). Here we go…
King Ranch Casserole is the perfect casserole to bring to a potluck! And it’s the perfect casserole to make and eat at home on a cold night too. Go ahead and make an extra one for the freezer…you’ll be so happy you did!
Frito Pie Casserole is a hit. Plain and simple. Everyone LOVES it!
Broccoli and Sausage Ravioli Casserole is something I mention often…because it’s so dang good and simple! Make this! Make it today! And then send me your thank you note :).
Southwestern Egg Rolls are the perfect appetizer, party bite or light supper (just add a salad and dinner is done!). Yummy!
Lasagna Cups make great appetizers and are a fun weeknight alternative to a lasagna! Yummy!!

Frito Pie casserole!! Makes me think back to my days at Camp Greystone! We used to do taco in a bag… a bag of fritos (individual size)and we would pile in the meat, cheese, sour cream, lettuce, etc and then shake them up and eat with a fork!!!

I made your southwestern egg rolls for one of our family Christmas parties. They were a hit!!! I have made them several times since and let me tell you I ALWAYS have at least one person every time ask for the recipe!!!

I made the sausage broccoli ravioli and it was a big hit! I made it the night before so after work and a basketball game, came home and put this in the oven and had a home cooked meal! Also I used a bag of frozen sausage ravioli. I just boiled it, then put everything together and put in fridge so it would be ready to heat the next day. Seriously my hubby and son were like..this is so good, yum, delicious!! So Thank you :o)!
