This was such a yummy dinner! And not only was it yummy…it was so simple too!
Instead of your basic Tex-Mex burritos, we mixed and matched our baked burritos into BBQ Chicken and Corn. Hello yummy.
This recipe makes 5 burritos.
Shopping List
1 pound of cooked and shredded chicken breasts (click here to see how I get perfect cooked chicken)
10 to 12 green onions, chopped
1 cup frozen corn
1 cup of your favorite BBQ sauce
1/2 cup of your favorite salsa
1 cup Monterey Jack Cheese, shredded
5 burrito sized tortillas, I used whole wheat but you can use flour too
Preheat your oven to 375 degrees.
Cover a cookie sheet with foil for easy clean up. Set aside.
In a large bowl, combine the first 5 ingredients. Set aside.
Lay out your 5 tortillas on your cookie sheet. Spread a little of your chicken mixture down the center of each burrito. Next, sprinkle your cheese over the chicken. Wrap the burrito by tucking in the top and bottom ends first and then folding the other sides over left, then right. Flip the burrito so that the seam side is down on the cookie sheet.
Bake 15 to 18 minutes or until nice and brown on top.
Remove from oven and serve.
We like to eat our burritos with either sliced avocado and cherry tomatoes or black beans.
This dinner is just about assembling ingredients. There is no complicated cooking involved. Perfect for busy nights!
