I took two of my favorite things and combined them into one…my Spinach and Sun Dried Tomato Meatballs and my love affair with the Sloppy Joe. Such a simple, flavorful and delicious supper. Enjoy!
Shopping List
1 pound ground turkey
4 cloves garlic, grated
1 package frozen spinach, thawed and drained of excess water
1 (8oz) jar of sun dried tomatoes in oil, drained
2 teaspoons of lemon zest
Feta cheese, crumbled to garnish
Chopped green onions to garnish
salt and pepper
Extra Virgin Olive Oil (EVOO)
Burger Buns
In a large skillet over medium-high heat, brown your turkey in a drizzle of EVOO until browned and crumbly. Add in a liberal pinch of salt and pepper. Stir in your garlic, spinach, sun dried tomatoes and lemon zest. Reduce heat to medium and let simmer about 5 minutes or until everything is heated through.
Take each burger bun and top with a generous portion of your ground turkey mixture. Garnish with Feta cheese and chopped green onions.
This recipe will make about 4 Sloppy Joes.

These look delicious! Of course, my husband isn't a big fan of sloppy joes or tomatoes, so I'm not sure he'd be a big fan of them… But I guess that just means I'll have more for myself!

I must have cooked mine too long, because it turned out dry. That said, I took the leftovers and threw it in an omelet the next day with feta cheese- amazing!!!!

Just tried this but mixed and matched sun dried tomato pesto instead of the garlic, lemon, and sun dried tomatoes. Perfect!!
