These bars are so good! My girlfriend Narci (who has had pretty much every single bar I’ve made) loved these so much that she ate two and then asked me for the recipe so that she could make them at home. When your friends love a recipe that much, you know it must be a really good one!
Easier to make than cheesecake but with the same great texture and yummy flavor. Your girlfriends will love these bars too!
Shopping List
1 box lemon cake mix
1/4 cup vegetable oil
1/3 cup milk
4 eggs, divided
3 (8 oz) packages cream cheese, softened
2 1/2 cups powdered sugar
1 1/2 cups blackberries (if you use frozen, bring them to room temp)
1 tablespoon lemon zest
2 tablespoons lemon juice
Preheat oven to 350 degrees
Grease (I use Pam) a 9×13 inch baking dish and set aside.
In a small bowl, combine cake mix, vegetable oil, milk and one egg. Pat evenly into pan to form a crust. Bake about 8 minutes. Remove from oven
Meanwhile, in a separate bowl, beat cream cheese until fluffy. Beat in powdered sugar. Next, beat in blackberries and remaining 3 eggs and beat until smooth. Beat in lemon zest and lemon juice.
Pour blackberry mixture over crust. Bake 40-50 minutes or until set.
After you remove it from the oven, let it rest 30 minutes on the counter before refrigerating at least two hours before slicing and serving.
Keep refrigerated when you’re not enjoying the bars.

We have a blackberry bush that is overflowing, so I was so glad to find some yummy berry recipes on your site. These are in the oven right now. The problem will be waiting 2 hours for them to chill before we can eat them!
