I just love a Caprese Salad. You know…basil, fresh mozzarella and tomatoes. I love the salad so much that I decided to make a burger that tastes like one. Honestly, this burger was just about as simple as a boring old plain burger…but with a lot more flavor (and a few hidden veggies too!).
Shopping List
1 pint of cherry tomatoes
1 pound ground turkey
1 box chopped frozen spinach, thawed and all of the excess water squeezed out
4 thick slices of fresh mozzarella
Basil to garnish
Extra Virgin Olive Oil (EVOO)
Salt and Pepper
Burger Buns
Preheat your oven to 400 degrees.
On a foil lined baking sheet (makes for easy clean up), spread out your tomatoes. Drizzle about two tablespoons of EVOO down over the tops of the tomatoes and a liberal amount of salt and pepper.
Roast your tomatoes about 15 minutes.
While the tomatoes are roasting, make your burgers. In a medium sized bowl, combine ground turkey and spinach. Form turkey mixture into 4 burger patties.
On the outside grill (or indoor grill pan), cook burgers about 8 minutes per side over medium-high heat.
Remove cooked patties from grill and assemble your burgers. Top your bun with a patty, a piece of fresh mozzarella, some of your roasted tomatoes, a few torn basil leaves and then drizzle everything with a bit of EVOO and a pinch of salt and pepper.
Dinner is done. And it’s really, really good!

Caprese salad is my favorite, so this burger looks SO good to me! I have to tell you – I've been making LOTS of your recipes over the past few months, and you're the new favorite person in my house. When I make a new recipe of yours, everyone says "Yay for Shay"! I used to make the same boring stuff over and over, so I'm really having fun experimenting. Thanks so much!

I never really enjoy a whole burger, so I made these into sliders using King's Hawaiian rolls as the bun. They were so good and so cute!

PS: Your "about me" on the right on this page says Mama of 2…. Time to update that Mama of 3 🙂

Loved these! Made them for my husband who "doesn't really like turkey burgers or tomatos" and he LOVED them. They were easy yet felt kind of fancy 🙂 Thanks!

I just wanted to let you know how much we love these burgers. I have made them so many times and have been a hit every time. I've made them several times for company and everyone loves them. Thank you!

These burgers are so delicious! I’ve made them regular size and in slider size with great results. One tip that I like to use is to omit the basil and olive oil at the end and to use prepared pesto. Thank you for such a great recipe Shay.
