I made these little wraps the other day for lunch and then thought, dang, that would make a great dinner too! Simple enough for lunch but hearty and yummy enough to serve for dinner. The perfect little recipe.
This recipe makes 4 wraps. Of course you could make less if you’re just serving yourself for lunch.
Shopping List
1 pound of cooked and shredded chicken (use leftovers, deli chicken, a rotisserie chicken, grilled chicken…whatever you have!)
1 cup or so of your favorite honey mustard salad dressing (I used Newman’s Own)
1 cup of frozen (or fresh) corn kernels, at room temp
6 or 8 green onions, chopped
About 2 cups of fresh spinach leaves
a pinch of salt and pepper
4 large tortillas (flour, corn or whole wheat work)
In a mixing bowl, combine your cooked chicken with the honey mustard dressing, corn and green onions. Add in a pinch of salt and pepper.
Lay out your four tortillas and sprinkle a few spinach leaves down the center. Spoon your chicken mixture over the spinach. Wrap up your tortilla and you’re ready for lunch.
So simple! I wrapped up my tortilla in a paper towel and then placed it in a baggie and headed off to the pool. The perfect little lunch and a great way to use up leftover chicken.
