Last June, I mentioned how lunch is my least favorite meal of the day…and boy, so many of you ladies agreed! Breakfast is good because it gets my day going and dinner is great because my family and I sit down at the table together…but lunch, lunch just kind of happens with very little thought, motivation or enthusiasm.
This June and July, I will be posting at least one lunch recipe a week. I really want to enjoy my mid-day meal this summer…not just graze on whatever I can find in the pantry. We are going to take back lunch this summer! We are going to make an effort and enjoy our mid-day meal :).

We like to make pizza English muffins for lunch. Just cut an english muffin, put pizza sauce, veggies and cheese on each half and heat them in the oven until the cheese melts. They are quick, easy and the kids can assemble them themselves.

My kid's favorite lunch is a Rachel Ray recipe that I modified. Bring one box of chicken broth to a boil . Add in a package of refrigerated ravioli or tortellini. (Any flavor will work, but they love the bite size ravoletti) The last minute of cooking add in a couple of handfuls of baby spinach. Ladle into bowls and sprinkle with Parmesan cheese. This little lunch looks fancy, but it's easier to make than boxed mac n cheese.

I used to make chicken & cheese quesadillas for me and the kids when I stayed home with them. They were always a favorite.

So I have a favorite wrap I invented that I love to eat for lunch with veggies and fruit on the side and sometimes a couple pita chips with hummus!
The wrap calls for the following:
Your favorite tortilla (I either do spinach or whole wheat tortilla wrap)
Laughing cow spread (any flavor – my favorite is the light garlic and herb)
Spinach leaves
Tomato- sliced or diced
Turkey pepperoni/ or shredded chicken – deli turkey would be yummy too
Avocado- sliced or mashed – whatever is easier for you to spread
Bell peppers and red onions – if I have them on hand
Dill pickle hamburger slices
Spread the laughing cow cheese on the tortilla- then mash the avocado and spread it on the tortilla. Put a handful or more of spinach, then other veggies and meat of choice and then pickles. Roll the wrap, cut, and enjoy!
This wrap is so yummy and so fresh and full of flavors!!!

I am so with you! spending time on lunch is such a drag! I usually end up grabbing a granola bar and grazing all afternoon because i'm hungry from not actually eating lunch! My favorite is to make a salad with cherry tomatoes, feta, avocado pine nuts, balsalmic dressing and some chicken or turkey.

This is one of my FAVORITE go to's. The leftovers are even better! http://www.tasteofhome.com/recipes/balsamic-chicken-pasta-salad I made some changes to it though. I skip the red onion and switch out Gorgonzola for fresh mozzarella. SO DELICIOUS!!

We do shredded chicken mixed with hummas and lawyer on toasted what rolls with sliced cucumbers.

I had a salad from Chick Fil A last week.. it was SO good. I went to the store & bought stuff to make it myself. It is basically romaine lettuce, grilled chicken breasts sliced, grapes, strawberries, blueberries & a little feta cheese.
Sandwiches on whole wheat with a side of grapes or another fruit..yogurt..
Lean Cuisine has a few lunches with no preservatives.

Leftovers are the go-to for lunch in our house. Today it was your Root Beer Tostadas – everyone at work was jealous of my yummy lunch!

We do the English muffin pizzas for our daughter – it's even more fun when we have a play date!
My latest lunch favorite has been Trader Joe's harvest blend (one bag cooked), Trader Joe's corn tomato-less salsa (one jar), and on bottle of Trader Joes Greek feta salad dressing. Just mix all the ingredients together. Super easy & so yummy!!

Hi! I love to change up lunches for my kids. I spread Laughing Cow Soft Swiss Cheese spread on whole wheat bread and then slice up thin cucumbers and place on top of spread and make a sandwich. It's a nice refreshing change to PBJ.
